How can I upgrade my factories?

I have started the game all over again several times now, but the real trouble always starts as soon as I find the recipe for a praliné - because I simply cannot manufacture it yet! I keep getting hints ON HOW TO FIND THE BLOODY RECIPE, but nobody ever offers to sell me better machinery or something. So I keep on making chocolate squares until I start thinking I must have mutated into one myself... HELP!
