how do i get my guard to to do a specific job or my prisoners i dont have any instructions it didnt come with any im kinda lost i cant place security where i want it and the prisoners just walk around like they own the place

Prison Employees can be sent to do something else. Put the cursor on the person, right click mouse button, then click the green "duty" button on the small worker info screen that pops up.
If you click the person after you right click, you should be able to move them. I think you have to click the left mouse button to put them down in the new location.
Move your guards to where prisoners are fighting, also if you put angry or fighting prisoners in the health building near the chapel or therapy room, their mood will get better.
